Our venison chili recipe is easy to follow and can bring the best out of this lean, richly-flavored meat.


Classic Venison Chili


Prep Time: 15-20 minutes.

Cook Time: Approximately 1 hour and 15 minutes.


Ingredients:

  • 2 lbs ground venison

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 2 tablespoons tomato paste

  • 1 can (28 oz) diced tomatoes

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained (optional)

  • 3 tablespoons chili powder

  • 1 tablespoon ground cumin

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried oregano

  • 2 cups beef broth or game stock

  • Salt and pepper to taste

  • Optional garnishes: sour cream, shredded cheese, chopped green onions, cilantro

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Sauté the onion until translucent, then add garlic and cook until fragrant.

  2. Add the ground venison, breaking it up with a spoon. Cook until browned.

  3. Stir in the tomato paste and spices, cooking for another minute before adding the diced tomatoes with their juice, beans, corn (if using), and beef broth.

  4. Bring to a boil, then reduce the heat to a simmer. Cover and let cook for about 1 hour, stirring occasionally.

  5. Adjust the seasoning with salt and pepper. For a thicker chili, simmer uncovered for an additional 15 minutes.

  6. Serve hot with your choice of garnishes.
