Ingredients:

  • 1 lb bison steak, thinly sliced

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 1 tablespoon all-purpose flour

  • 1 cup beef or bison broth

  • 1 cup sour cream

  • 1 tablespoon Dijon mustard

  • 1 tablespoon Worcestershire sauce

  • Salt and pepper, to taste

  • Cooked egg noodles or rice, for serving

  • Chopped fresh parsley, for garnish

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the thinly sliced bison steak and cook until browned on all sides, about 3-4 minutes. Remove the cooked bison from the skillet and set aside.

  2. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are golden brown and have released their liquid.

  3. Sprinkle the vegetables with all-purpose flour and stir to combine. Cook for another minute to cook off the raw flour taste.

  4. Slowly pour in the beef or bison broth, stirring constantly to prevent lumps from forming. Allow the mixture to simmer and thicken for about 5 minutes.

  5. Reduce the heat to low and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Season the sauce with salt and pepper to taste.

  6. Return the cooked bison slices to the skillet and stir well to coat the meat with the creamy sauce. Let the mixture simmer gently for another 5 minutes to allow the flavors to meld together.

  7. Serve the Bison Stroganoff over cooked egg noodles or rice, garnished with chopped fresh parsley for a burst of freshness.
